The shrimp and avocado sandwich is the perfect lunch time treat combining a number of flavors and textures. We love shrimp and avocado, but mixing them together results in our favorite sandwich ever. So here is the recipe we’ve compiled after putting hundreds of these sandwiches together and incorporating your feedback.

Time

Preparation takes 15 minutes.

Ingredients

For two sandwiches:

  • 12 medium sized cooked, de-viened and peeled shrimp
  • 1/2 avocado
  • 1 medium tomato
  • 1/2 cup spring onion
  • 1 cup lettuce
  • 4 slices ciabatta, sour-dough, whole-grain or your favorite bread
  • 2 tbsp mayonnaise
  • 1 tbsp spicy mustard
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper
  • Optional: monterey jack, swiss or your favorite cheese shredded
  • Optional: hot sauce
  • Optional: alfalfa sprouts

Method

  1. Cut the shrimp into three pieces each (or two pieces if you like them chunkier)
  2. Saute the shrimp in olive oil with salt and pepper
  3. Cut the tomato and avocado into cubes
  4. Cut up the lettuce and spring onion
  5. Combine the shrimp and vegetables in a large bowl
  6. Add the mayonnaise, mustard and lemon juice in the bowl and mix well
  7. Toast the bread to your liking (see the tip below for alternate toasting method)
  8. Spread the mixture in between two slices, cut diagonally and enjoy!

Tip: A better method for bread preparation is to butter two slices of bread and toast in a pan till brown.

Tip: We like cutting the shrimp into pieces to maximize the taste in every bite. You can leave them whole if you prefer.

Tip: You can substitute fresh steamed lobster pieces instead of  shrimp.
